If you’ve tried all the usual brunch recipes, here’s another great savoury crowd pleaser to add to your pancake repertoire.
15g melted Dairygold
100g wholemeal flour
Salt & pepper
6 slices Home cooked ham or parma ham
225g Gruyere cheese, grated
Blend all of the batter ingredients together.
Heat a pancake pan or non-stick frying pan over a medium heat and coat lightly with sunflower oil. Pour in enough batter to form a thin coat on the base of the pan.
Cook for 1 minute, or until the pancake comes away from the side of the pan. Flip over and cook until golden on the other side.
Place one piece of ham and some grated gruyere on half the pancake, fold in half and stack each crepe on a plate with layers of greaseproof paper in between.
Repeat the process with the remaining batter and serve immediately.
