Peel and cut the carrots into 2-3 inch lengths. Scatter the carrots into a roasting tray with a lug of olive oil, a pinch of salt and a sprig of thyme.
Pop in the oven and roast at 185°C/350F/Gas Mark 4 for 1 hour, stirring every 20 minutes.
To really bring the carrots to life, pop 3 Dairygold Garlic & Herb Flavour Melts on to the carrots, allowing them to melt and infuse. Give them a quick stir and serve with chicken or fish.
