Smoked Salmon with Dairygold Deli Original

Drizzle on to sesame bagels filled with hot smoked salmon, crisp fresh red onions, baby spinach and capers for a light, tasty lunchtime fill.

Method

Toast the bagels until they are golden brown.
Slice and chop the red onions and baby spinach, dress the salmon with lemon and arrange on the bagel.
Top with a drizzle of Dairygold Deli Original and a sprinkle of Capers to finish.

Chilli Loaded Garlic Baked Potato

Serve our amazing Garlic dressing with whole baked sweet potato, stuffed with beef chilli con carne, grated mature cheddar cheese and fresh picked coriander …..why not add a squeeze of fresh lime for a zesty finish for a low carb dinner alternative.

Method

Heat oven to 200C/180C fan/gas 6. Prick the potatoes in several places and bake for 45 mins until soft.
Meanwhile, heat the oil in a large pan, then cook the onion and chillies for 3-4 mins until softened. Add the beef and seasoning and cook for 5 mins, stirring often. Add the tomatoes and kidney beans, bring to the boil, partially cover and gently simmer for 30 mins.
Season the chilli. Cut the sweet potatoes open, spoon in some chilli and top with grated mature cheddar, fresh coriander and Dairygold Deli Roasted Garlic on top to add some fresh flavour. Garnish with fresh lime if desired.

Pulled Pork Smokey Chipotle & BBQ Burger

Spread Dairygold Smokey Chipotle Deli on to a toasted brioche bun, add tender, flavoursome BBQ pulled pork and crunchy slaw for a tasty BBQ addition….

Method

Heat oven to 150C/130C fan/gas 2. Rub the pork with 2 tbsp of the olive oil. Heat a large non-stick pan until very hot and sear the pork on all sides until golden brown.
Place the meat on a wire rack in a roasting tin. Mix the paprika, mustard powder, garlic and onion salt, and some black pepper. Brush all over the meat.
Add 1 cup of water to the roasting tin, cover very tightly with foil and cook for 5 hrs or until almost falling apart.
Drain the juices from the meat into a measuring jug. Shred the pork using 2 forks, discarding the fat.
Skim off the fat from the juices. Mix 125ml of the juices with 4 tbsp BBQ sauce and pour over the meat.
To assemble, pile the meat into the halved brioche buns, smother in Dairygold Deli Smokey Chipotle, spoon over the BBQ sauce, top with red cabbage slaw and sandwich together.

Halloumi & Avocado wrap

Squeeze some Dairygold Deli Original onto an open wholemeal wrap with pickled red cabbage, fresh mint, sliced avocado, grilled Halloumi and pomegranate seeds for the perfect livened up lunch

Method

Warm the wrap under the grill, and dress with pickled red cabbage, mint and sliced avocado.
Heat a non-stick frying pan or griddle pan. Cut halloumi into 6-8 slices and cook quickly on each side for 2 mins until lightly tinged brown.
Place on the wrap, add a dash of pomegranate seeds and lightly drizzle Dairygold Deli Original on top. The perfect instagrammable light lunch.
